It’s been a while since I have done a regular food post! There are so many photos building up on my camera that I want to go through and share a few random things and meals with you!
I have been packing Matthew’s lunch every morning. I don’t know how I got suckered into doing this. I never did it when we were living in the UK, but somehow since moving here I seem to have morphed into a suburban soccer mom. Let me be clear: I have nothing against soccer mom’s. However I happen to hate soccer and have no children. You see the problem.
Since we only have one car, most days I drop him off at work and pick him up in the evenings. For the entire first week on the ride home I would ask him if the other kids guys were being nice to him and if he had made any friends yet. Watch out, my next job might be joining the cast of Desperate Housewives.
While I am feeling domestic, I would like to announce the homecoming of a new little bundle of joy:
Popcorn in three minutes. No oil. No brainpower. I love it. Leave it to the Red Circle Boutique (AKA Target) to not only stock an item I have been coveting for quite some time, but actually offer it on sale.
Now for some food! What have I been eating? All sorts of good stuff.

This magic stuff is the perfect topper for Greek yogurt with banana and dried cranberries. It really is quite heavenly. I’ve been eating this concoction a lot.
Another new breakfast item:
For weeks I have been craving pancakes or waffles (perhaps due to the incredibly alluring photos Susan posted for her Waffle Wednesday?). However, I am without a waffle maker and too lazy to make my own wholegrain batter for pancakes. The Pancake Gods must have been watching out for me, because I found some Quaker Oatmeal Pancake Mix on sale at Lucky’s last week.
It was a sign.
Don’t worry, I’ve been getting my protein too.
This was a combination of leftovers (tofu, asparagus, carrots) with baked teriyaki chicken and brussel sprouts.
I really think there is plenty of room for pancakes in my life as long as I balance it out with meals like this
I do have one recipe to share. This one got my attention online because of the catchy name, and because it didn’t require a trip to the grocery store to throw together a dinner:
“Poverty Meal”
Adapted from this recipe on RecipeZaar.
It is likely that (assuming you are a meat-eater), you have all of these ingredients at home already. This is a great easy (and cheap!) dinner, and the best part is that it only requires one pot! That means fewer dishes!
Here is my version (serves 2):
1/2 onion, chopped
1 tsp. minced garlic (I used the kind from a jar)
1/2 lb. extra lean ground beef
1 16-ounce can chopped tomatoes
8 fluid ounces water
4 ounces wholewheat rotini pasta, raw
Salt and pepper
I chose to brown the meat first and not drain it. I know that is frowned upon, but the meat was so lean that there was hardly any fat in the pan. Then I was able to omit the olive oil and add the onions to the cooked meat.
Once the meat was cooked and the onions were tender, I added the remaining ingredients and let the whole thing cook at a boil for about 15 minutes, until the pasta was fully cooked.
It was an easy one-pot meal! Next time I would add more vegetables to it to bulk it up. For this dinner, broccoli and a salad rounded it all out.
