The Accidental Veggie
The snow is melting!
As I said in my post when I went vegan for a day, some days I easily go vegetarian without really thinking about it. This was one of those days.
Yesterday morning called for one thing: OATS! I braved the storm Monday night and went out and got groceries.

- 1/2 (40g) cup oats
- 1 cup water, vanilla, cinnamon
- 1/2 banana
- 10g dried cranberries
- 10g walnuts
- 1 T maple syrup
I had the nicest treat for lunch! I got to meet up with Miss Melissa of Trying to Heal.

We met at (guess where) Whole Foods! It is so cold outside that we decided on soup.
I chose a vegetarian black bean and tomato soup:
We had a hard time tracking down any wholegrain rolls, so we had to buy a pack of them from the bakery. We each had one and I took the rest home.
Melissa is so sweet! We had lots of fun walking around the store together and checking out all the goods
Since I’ve been out of the country for so long, Melissa filled me in on all the new cool products that I need to try! The girl is a bargain hunter, too…my kind of shopper!
After our lunch I stopped by my grandparents’ for a quick visit. Matthew had to get back to work though, so we didn’t say long. I got an apple and a soy pumpkin spice latte for our drive back.
I was in charge of dinner last night! That spaghetti squash that I stayed up late for the night before was on the menu. I went meatless, but also cooked up some ground turkey for Mom and Matthew.
This was my first time trying spaghetti squash! I think I am in love. Really, I love pasta because it is a vehicle for marinara sauce, so this is perfect. I am having leftovers for lunch today!

I had seconds of everything on the plate, plus a green salad that I didn’t photograph. It was an all-veggie dinner, and it was fantastic!
Dessert was a piece of my aunt’s fudge and Mom’s biscotti. She says it’s “only 1 point.” I just ate it because it’s good
If it weren’t for dessert, this post would have been called The Accidental Vegan!
I really need to get some exercise today. I haven’t worked out all week. It’s been so cold outside and I am so used to relying on a gym!
How do you get your workouts in when it’s cold outside and you don’t have gym access?! I’m thinking I need to go through my suitcase and pull out Jillian’s 30-Day Shred!

Exercise- I just ordered a Jillian Michael’s DVD (I am a home exercise DVD newbie!) because I HATE the winter months outside. It’s so damp here…also got the go-ahead to do some light non-impact stretch-type classes so looking into yoga
I do some quick cardio-strength circuits or would do a video!

I could not bring myself to even go to my garage to workout on the treadmill this morning, so Jillian and I have become super good friends. I already know what she is going to say before she says it.
Mama Pea and Lara have you tired the Jillian Michaels ONDEMAND? I’m wondering how it differs from the actual DVD.

grrr. welcome to the battle of my life (the cold weather).
i always forget about doing videos at home, but they are pretty legit ways to work up a sweat. im used to running, so i have to keep reminding myself that there are other ways to exercise!!

I hit the treadmill! I know it might be boring for alot of people but I just crank up my mp3 player and focus. It’s really quite pleasant
Yummy eats from whole foods!!! What a fun meetup, too. When its super cold I usually just bundle up.. I dont belong to a gym or anything. If its totally unbearable I just do exercises on my yoga mat in front of the TV
I don’t go to the gym so I normally use workout DVD’s, my treadmill or the stationary bike.
I love spaghetti squash, so good. It’s got such a great flavor and texture that you don’t even miss pasta. I would make it more often but since I’m the only one who eats it, it can get old after 3 or 4 days.

Ahh yes, 30 day shred is a great one. One the cold days I go to the gym or pick a workout from FitTv on my cables’s on demand channel. It is worth the darn money we pay for cable. Spagetti squash is deffinately a keeper. I had some a couple weeks ago.
DVDs are definitely the way to go in terms of indoor exercise (although I wish I had a treadmill! Those who do are SO lucky) Probably the most challenging DVD series I’ve come across are Nell McAndrew’s series…one of them is 1hr 45 minutes in length and incorporates cardio, strength training, abs and stretching so it’s a fantastic challenge…appropriately enough as it’s called ‘Ultimate Challenge’
Your eats today look lovely ~ I’ve never managed to locate spaghetti squash in the UK and I think I’m totally missing out!

and workouts in the cold, i suck it up, layer up, and do it. Grew up in MN and Chicago where it’s 0 degrees for 6 mos a year and I just dress in layers, swear alot!, and do it…LOL
I love spaghetti squash! The portion size for real pasta really stinks so I love the bulk you can get with the squash!
If it’s too cold and I have no gym I either do a workout dvd or make up my own routine with things like burpees, jumping jacks, jumping squats, push ups, etc!
I find that happens to me some days when I realize I have eaten vegetarian. Not usually vegan because I can’t do without cheese!
I just got the 30 Day Shred for x-mas. I am starting tonight
I also like yogadownloads.com You can get the 20 min sessions for free. They’re great to take with you and they don’t care what the weather is.
I want to try spaghetti squash–they don’t have it in Oz.

You have to try spaghetti squash with pesto. It’s delicious!
Do you have stairs or a jump rope? Those are two cardio activites that you can do. Even just doing a series of squats, lunges, squat jumps, lunge jumps, pushups, tricep dips, mountain climbers, burpees, crunches, planks… any and all of those will have you panting after 20 minutes
That first picture is gorgeous!! Sounds like a fun day, Lara. I only had spaghetti squash once and I overcooked it. I think it’s something I would like, though. Too bad Adam already warned me that he’s done eating squash. More for me?

Jillian dvds.. yes, are good, except usually when I don’t have access to the gym, its also the case of “I don’t want to be loud doing jumping jacks” for me. Hahaa.. So yoga podcasts are the perfect workout! Trust me Lara, power yoga breaks a sweat too!
Loving your meatless meals. And its official- the Tucson Whole Foods is the worst WF in the country. It was an old Wild Oats, so it doesn’t have all the “shine” they normally have, but its still a WF nonetheless. Yay for blogger meetups!
Hey there- what? No whole grain rolls to offer with soup? WF needs to get their act together (or it was a ploy so that you’d go and buy a whole bag- grrrr) Fun that you did a meetup! And it must have been so fun perusing the aisles. I take forever alone- can’t imagine how long it would be with a fellow foodie!
You know what I do in cold weather for a workout! Hotel Room L&S!! Basically what Susan said- get creative. Anything that burns or makes you sweat is great.
Q: Why didn’t you nuke the squash? I’ve never baked it? Only nuked. Mine always seem fine. Perhaps you can ask your readers if they notice a difference??

I have my accidental vegan days too, and I love love love spaghetti squash. One of my favs. It’s so good savory, but I also love it sweet with roasted almonds, cinnamons, raisins, and just a drizzle of maple syrup. It’s good cold or warm. Yum.
How fun you got to meet Melissa. I met up with her last Christmas in Arizona. She has a very kind heart. It’s about time you get do to some blogger meet-ups at Whole Foods!
I don’t have any motivation to work out lately. I just am too busy, and outside is too ugly to go and run or ride a bike. I’ll just relax a bit this winter, with some yoga inside

and glad the snow is melting! when i got up for the interview there was super thick ice on my car! and then i slipped and fell on my arse in the parking lot…huge bruises now! haha!
