I totally did the same thing with yogurt for dessert last night too!

As for lunches, I usually take leftovers, but if there isn’t any or I’m in a rush, I usually throw some sandwich fixings in bag and go. There is always a ton of bread around to make a sandwich with! ;)

I LOVE leftovers for lunch!!! That’s my main philosophy, cook a few big meals and then have leftovers for lunch and dinner :) makes it easy and yummy. I still like a good panini too or I transform leftovers into something different. So cool you got some dates too, I think there are quite a few varieties. Have a great week!!

  3. Great blog! I like leftovers, but my hubby loves them!

  4. ellie says:

I am a sandwich person all the way! I’ve never had a job where I felt comfortable bringing something that might be messy so sandwiches were easiest…

I like oats sweet too- yay maple! I LOVE the Eat Natural bars- have you tried the cherry almond one? There are kids ones too which are slightly smaller and have 2 fruit portions in them.

  5. I love leftovers too! It’s not that I don’t like sandwiches, but leftovers are just soooo convenient. And I truly don’t mind eating good food for several days in a row… ;) My family is another story however… They make funny noises and funny faces when they even say the word leftovers…

Recently, I have also gotten into making wraps with Alvarado St. Sprouted tortillas, and they are great. But still, leftovers are much more convenient…

  6. Your oats looks wonderful!! I usually make sandwiches for lunch–but if I can incorporate leftovers into a wrap/salad, I definitely prefer that. Esp because i’m one of the weirdos who loves cold leftovers haha

  7. Hey sweetie! What kind of tofu do you buy? I am stumped as to what kind to get here, so I stick with Quorn products which are super expensive.
I haven’t been posting much… said goodbye to my bro tonight – he leaves for Afghanistan soon – so I’m kind of drained and tired. But I need to blog!! He found my blog yesterday and teased me tonight, saying I must think I’m “a special snowflake” if I need to tell everyone about my life ;-) Made me feel better, lol.

  8. I swear my googlereader was playing tricks on me…I didnt see your post from yesterday til this one just hit, then I went from 0 to 2 for you. Weird. But now that’s all squared away…soooo, your tofu stir looks rockin. I cant digest soy so that’s out but the other veggies, mmmmm goodness. And that pic of you and your man yesterday w/ water and boats in the background, you are beautiful and radiant. You look awesome :)

And Ive never heard of the Eat Natural bars. Always another bar on the market to try, i swear.

Leftovers in lunches? Sometimes, but sometimes I just make little containers of this n that, dried fruit, nuts, random baked or unbaked goods ive made :) just depends on what I’ve got on hand if i start over or use lefties up.

    xoxo

  9. Maggie says:

I actually add a dash of salt to all my bowls of oat bran, sweet included :) It brings out the sweet more, I find.

  10. Leftovers are the best and save me often from eating something I shouldn’t!

Thanks for the oatbran idea; I may try that tomorrow!

I remember those Eat Natural Bars from winning the BSI challenge – they were really good!

  11. Emily says:

Oh, that oat bran looks so good! It’s the middle of a warm afternoon here but for some reason I’m craving comfort food :)

My plan for leftovers is usually to feed them to the husband. Except for a few select meals, I just don’t like leftovers (I do feel bad about this)! I like to pack lots of snacks. Lots of little things to look forward to, and if I can’t manage to eat a full meal at once, I can graze and eat when I am able.

  12. Melissa S. says:

that tofu looks amazing! and i remember having that bar…delish!

i like to pack sammies for lunch, and have leftovers for dinner…that’s my style!

  13. Maria says:

Sandwiches are convenient, but I like more veggies into my lunches, and not as much carbs (sandwich = 2 slices of bread + measly serving of veggies usually), and salads can be a pain to make, but I tend to make them because we usually don’t have leftovers =P. I need to think of more portable lunch ideas before school starts!

  14. Your stir-fry looks so amazingly colorful! I don’t eat leftovers much since I seem to never cook enough quantity to have leftovers (I guess that would happen w/ a family of five)

For packed lunches, it is almost always PB&J, simple, always satisfying and best of all: no refrigeration necessary :-)

  15. april says:

Your oatbran looks and sounds absolutely delicious! I’m a sweet oatmeal/oatbran person myself.. I still haven’t tried savory oats!

I have to admit I like sandwiches and salads better than leftovers! Unless I use leftovers to make a sandwich or salad (like using leftover salmon in a pita or something!)

  16. julie says:

mmm great dinner girl! I’m deffffinitely a sammie kinda girl when it comes to packing lunches but I do like mixing it up a little :)

  17. Lauren says:

Having leftovers is so great! Especially stir fries. To me, these always seem to taste so much better as leftovers.

Hope you have a great week hun!

  18. When it comes to lunches, I’m a salad girl or a leftover girl … I like the occasional sandwich, but I dunno, salads just always seem to sound better and they’re so quick and easy to put together.

  19. I’m not very good with a salad for lunch. Especially one that I’ve packed. I usually feel really run down at lunchtime during my workweek so a salad just isn’t going to cut it. Sandwiches are good but I like my lunches to have many different parts and the sandwiches I normally go for are a little high in calories.

Snack filled lunches seem to work the best, especially ones with sweet, savory and crunchy options.

Leftovers are good too, provided there is enough to fuel me through the rest of my workday without feeling deprived.

    Your oats look fabulous btw!

  20. I love leftover veggies for lunch. Just pack a container of roasted ones and throw some almonds on top. Perfect.

Your scraped together dinner was so colorful. I love it.

Do you have a job Lara? For some reason, I figured you didn’t work because of all the green card stuff. I did not realize you were a 9 to 5er.

  21. Jessie says:

Definitely a leftovers for lunch girl. I specifically make enough servings some nights just for that case. Although, if I have the right ingredients nothing beats an awesome sandwich or the “leftovers salad” where I throw in all the leftover meat/veggies that are about to go bad, but that’s very rarely the case

  22. Yeah, I echo Heabs question…hopefully no one at the immigration office reads your blog :-D

I love sarnies for lunch= even if not all that filling. Salad is a HUGE pain to bring with.

Your eats have looked great. The one day I photographed all my eats, I really needed to lay down from the exertion! Do you find it tiring!?

  23. Katharina says:

Leftovers are easy, but having a nicely packed lunch is always nice to look forward to :) It’s a like a special little treat you especially made for yourself that day.

p.s. I bought parsnips today and I thought of you. Can’t wait to roast them!

  24. katecooks says:

leftovers are the best. i am just so sick of packed sandwiches and salads. i’d so much rather have dinner part 2 :)

  25. Susan says:

That’s my magic oatbran combo too! It gets so big and fluffy, I love it :)

I’m a sandwich gal. But my 9-5 job takes place out and about and not in an office. Trying to eat cold spaghetti in my company car while on the road doesn’t sound very easy :P

  26. lauren says:

that oatbran looks delicious, i need to try it myself i think!

Im definetly a sandwhich kinda gal :) even when im at home i have sandwhiches most days…i LOVE wholemeal bread, its just so good! i never have leftovers for lunch but the odd time i may have them for dinner the next night.

Enjoy your tuesday hun! and let me know if your heading to dublin :)

  27. Gina says:

When I pack my lunches I usually do leftovers or a bunch of snacks!! I pack granola, two fruits, some peanut butter and carrots, cheese sticks, yogurt, etc. That’s just the easiest way for me!
Your breakfast looks great. I’m into the oat bran lately, it keeps me nice and full!

  28. ah sweet oats are the only way to go. I love your method of adding more water for more volume!!

  29. Ruby says:

I love leftovers for lunch, but usually don’t have any OR I find it too much of a hassle to pack. If I think of it though, I like to make soup for the whole week or a pasta salad and that keeps me very happy. I keep seeing oatbran around but haven’t tried it yet… i really ought to look up how to make it, *lol*.

  30. I love leftovers!!! I’m lucky to have a fridge, toaster and microwave at work, which makes it much easier for sure. I like sandwiches on occasion, but I find that leftovers involving lots of veggies or a lunch that includes a big bowl of soup are the best things for keeping me full throughout the afternoon.

Yummy oat bran! Bananas and walnuts are such a match made in heaven!

  31. K says:

I need to try having a half cup of oat bran because 1/3 does nothing for me in terms of staying power.

I’m always secretly jealous of those Eat Natural bars! They look so crunchy and delicious! I’m a sandwich girl – I need my carbs and I like the portability of sandwiches. However, usually I have lunch at home so I’m lucky in that I can do what I please.

  32. Leftovers are the absolute BEST!
Your bowl of spaghetti and veggies looks sososo good–I love all the colors!

  33. Biz says:

Your tofu veggie stir fry looks delicious! Leftovers work out in our house because my husband hates them, but I love them! :D

  34. I like leftovers!! Sandwiches seem more like snacks unless they’re super special sandwiches stuffed in pitas or something! haha

    Your dinner looks GOOD!

  35. I am a big fan of leftovers if they were good – love not having to think about what to make! I love it if I can be bothered to make a good salad but normally I am more of a sandwich/wrap/pita kinds girl – satisfies me a whole lot more!

  36. Hayley says:

As always, yummy eats!! I’m not a sandwich for lunch person either unless I’m out at a restaurant and it’s hot with gooey cheese or hummus and tons of veggies. :) Leftovers and/or salads sound good to me!

  37. ~Carla~ says:

Love your “Drive by” post comment… lol!! I don’t have to pack a lunch very often, but when I ever have to, I prefer more “snack” foods.. fruits & veggies, cheese & crackers, etc… don’t like ’soggy’ salads or anything like that, so I tend to stick with the easy & portable foods!

    Your dinner looks delicious.. yum!!

  38. erika says:

I like leftovers the next day if it is something I will look forward to. But if not, I will usually make a salad. Yes, totally a pain in the neck, but I do like eating it. And to me a sandwich needs to be fresh!

  39. Ali says:

soo pretty much, your pictures areee unbelievable haha

  40. I like to use leftovers for lunch, but not for dinner so much! Your food always looks great!

  41. elise says:

i like my oats sweet too, so (minus the walnuts) that looks like an AMAZING bowl of yummy!

my lunches are pretty standard (im sure you could recognize the theme by now…haha) – throw tons of stuff into a tuperware with lettuce on the bottom (i guess it counts as a salad).

  42. Marina says:

1/2 cup of oatbran is 60grams? How ’bout oats? I just can’t understand those cups and measures. Grams and ml are the best :D

  43. glidingcalm says:

Your breakfast looks amazinggggggggggggggg! I have to try dates in my oats!!

I love the way you eat Lara, I know I’ve said it before, but it’s true!!

    HAPPY THURSDAY LADY!

  44. Jessica says:

I actually looooove packing sandwiches!! My favorite kind would have to be two slices of soft, whole wheat bread slathered in hummus, veggies, tofurkey, etc….with some fruit on the side, of course :)

leftovers CAN be fun, but since I don’t have a kitchen to cook in….I never have any!

ps-that breakfast, the stir-fry and pasta dinner all sound sooo amazing right now!

  45. Holly says:

ohhhh i love the idea of putting yogurt + jello together!

and obv, i LOVE my oats sweet :)

  46. natalie says:

You dinner looked great. You are such a great cook..oh the day that I become a good cook! Ha! I really like the biggest loser, however i think it drags on for way to long, it could be an hour show and be just as good. I hate the Jillian and Bob are swearing up a storm this season, its kinda silly. I also think its a bit rediculous to burn 6000 calories a day. But that being said, i still love watching!! it is truly inspiring…i think to myself if they can do it …so can i! FYI I switched to self hosting at http://www.nono2yoyo.com. :) have an awesome weekend!

  47. bhealthier says:

you dinner is so colorful and fabulous! I am a fan of biggest loser- anything that kicks this obesity epidemic america has going is fantastic! means I will have job security ( haha)

Unfortunately, i had to work and jeff watched hockey- meaning the biggest loser did not record- fill me in?!?!

  48. bhealthier says:

oh and i LOVE having leftovers for lunch or for meals the next few days. YUM!
