California Bound!
Some exciting news! Long, long story short: Matthew found out earlier this week that he will be going to Hong Kong on business next week, so we decided that I deserved a little “vacation” too…and I am flying home to California tomorrow to stay for ten days!
We only booked the ticket this morning. I am so excited! I was going to surprise my mom but then I realized, I would kind of like her to be there when I arrive
So I called her this morning and she freaked out. I WILL surprise my dad and sisters, though. It’s something I have always wanted to do!
I was so excited this morning that (gasp) I nearly forgot to eat breakfast. No, really. And that never happens. So, around 11 I attempted to scrub something up. Since no one will be in the house for the next week, we decided to see if we could get through the day without getting groceries (which we desperately need). As a result, my food is weird and random today…which is why I thought it would be especially fun to share!
Breakfast was an egg scramble with two eggs, frozen spinach, mushrooms, onion, and a Laughing Cow Light. I would have loved an orange with this but those were on the grocery list so I had to do without!
Then for lunch, I had something quintessentially British: beans on toast!
We like to do cheesy beans on toast, though
It’s just a slice of wholewheat toast, topped with some “mature” cheddar cheese, and then piled high with hot baked beans to melt all the cheese. Yum! I am going to miss Heinz Baked Beans when we move back to The States!
I felt a lunch “dessert” was in order. Graze with Me made a comment in my last post that made me think I need to try dates with nut butter.
Oh. My Goodness. WHY did no one tell me to try this before?! I love, love the salty and sweet combination. I bet it would be amazing with Barney Butter. Note to self: pick up more Barney Butter in California.
As you can imagine I’ve been running around all day preparing for my early flight from London tomorrow. I’m also getting Matthew ready for his meetings in Hong Kong. This means lots of laundry and ironing!
Dinner was really ugly so I didn’t take a picture, but I’ll tell you what I had so you can get the full idea
It was more British food…not so healthy though: fishsticks with a few French fries (just a few, and they were baked!) and a random assortment of vegetables: peas, carrots, and mushrooms. It was weird but delicious. With lots of ketchup, of course.
For dessert I’m going to have a popsicle. So now I’ve come clean for today
I’ll have my laptop with me in California but I’m not sure how often I’ll be online. I’ll probably check in a lot because I’ll want to share all the good eats I intend on having!

umm, are you fo reals? you only JUST tried dates and nutbutter? homie you have been living under a rock to have missed that fad, but im glad you have found the light…its a TO DIE FOR COMBO. seriously, its like PB&J bitelettes. amaze.
the bean-y toast doesnt have me as enthused. kyle took one look and made some “wanker” comment that i wont post, haha.
anyways, im SOOOOO happy that you get to surprise your fam. i take it they dont read the blog? i hope not, for the surprise sake…
